Sun-dried Tomato, Spinach & Prosciutto Grilled Cheese

So my newest blog buddy (well, newest blog-I-stalk lol) recently won in this big grilled cheese competition they do in LA. How cool is that?? It was funny because when she posted that she was entering, I had just bought all of the ingredients for my grilled cheese. But dang theirs sounded reaallly good, it was a dessert one with brie and strawberries, yum!
Mine is savory with fresh mozzarella, a bit of prosciutto (my hubby is a prosciutto fiend), spinach and sun-dried tomatoes. I love love love sun-dried tomatoes, I think they are so yummy in pastas and such. I didn’t do any measurements in the recipe because I didn’t think it was necessary, nor did I use measurements myself.

My Rating: 9/10
Why: Um…it’s grilled cheese. You can’t really go wrong lol.

Mozzarella, Sun-dried Tomato & Prosciutto Grilled Cheese

  • your favorite bread (I just used a thick-cut multi-grain bread)
  • fresh mozzarella cheese, grated
  • spinach
  • prosciutto
  • sun-dried tomatoes packed in oil, cut into bite-size pieces
  • butter

Directions:

Heat your pan on medium.
To make your sandwich, sprinkle some cheese on a slice of bread then top that with tomatoes, spinach and a slice of prosciutto. Place your other slice of bread on top.
Melt some butter on the hot pan, and once melted place the sandwich down and let it cook until it is nicely browned and the cheese has started to melt, 1-2 minutes. Then flip over and do the same on the other side. Make as many as you want đŸ™‚
