I’m so excited about this one. It’s super simple and yummy, and you can make it as a gift or bring it to a picnic or just make one serving for yourself. I use strawberries all summer long because they are the cheapest berry, and this is a perfect summer strawberry dessert. Def. making again soon because it was so easy and nommy.

Why: It’s everything you’d want in a summer dessert: light and refreshing. I suppose my only lament is that the balsamic vinegar dampened the bright red color of the strawberry sauce. Next time I might try it without…but maybe not.
Strawberry Panna Cotta Cups
Makes about 4 servings
Strawberry Sauce:
- 1/2 pint strawberries, plus extra for garnish
- 1 Tbsp granulated sugar
- 1/4 tsp balsamic vinegar
- 1 Tbsp water
- 1/2 tsp corn starch
Panna Cotta:
- 2 c heavy cream
- 1/4 c sugar
- 1 tsp vanilla extract
- 1 packet powdered gelatin (about 2-1/4 tsp)
- 3 Tbsp cold water
Directions:
Place strawberries in a food processor and blend just until it is in uniform small bits (don’t puree). Throw the blended strawberries, sugar and balsamic vinegar into a small saucepan and set over medium heat. Bring to a boil, then turn down to med-low.
In a small bowl, combine the cold water and cornstarch. Add that to the strawberries and stir for 1-2 minutes until slightly thickened. Pour into your glasses/containers and let sit. Once it reaches room temperature, place in the fridge to cool.
For the panna cotta:
Pour the cold water into a small mixing bowl and sprinkle the gelatin over that. Let sit for 5-10 minutes.
Combine the heavy cream and sugar in a small heat-proof bowl. Microwave for at least 2 minutes until the sugar dissolves and the mixture is hot. Stir in the vanilla extract.
Pour the heavy cream mixture over the gelatin and stir until completely dissolved. Let that sit until almost room temperature, then pour into your containers over the strawberry layer. Refrigerate overnight or at least 4 hours. Garnish with leftover strawberries.
