These days I’m craving anything fresh: fresh salads, fresh berries, fresh juices, etc. I think it’s half because it’s summer and I’m constantly dehydrated from sweating in the heat, and half because I’ve finally started training for the San Fran Nike half marathon which means my body is craving fuel.
Don’t worry though, I still eat my occasional Shin ramen.
The other day I saw a mint lemonade recipe (gosh I wish I could remember where!) and it looked so delicious I decided to form my own mint lemonade with a twist. Think I did pretty good, so I’m tucking this one away to use for special occasions.

Why: I wish I didn’t have to use so much sugar, but alas it is necessary. If it was hubby, he would substitute Splenda.
- 1/2 cup lemon juice (about 4 lemons)
- 4 strawberries, plus extra for garnish
- 8 tsp sugar
- 2 mint leaves
- cold club soda (about 16 oz)
Directions:
Mash or process your strawberries. I like it left a bit chunky.
Place your mint leaves in the bottom of your glasses and use the back of a wooden spoon to crush them until they are fragrant. Add the sugar, lemon juice and strawberries and stir to combine. Then fill with the club soda, give it another quick stir, and garnish with leftover strawberries.
