I posted on my Insta a picture of some smoked salmon that hubby received as a gift for showing some retired pilots around the base. It was really cool because they had literally caught, smoked and canned it all themselves in British Colombia. Sadly I didn’t eat any because I don’t actually like smoked salmon….but hubby gobbled it right up. Well they also gifted him a few other things, a shiz-load of dried fruit among those. So I took some of it and created these bars. I love the texture that the dried fruit lends them, it’s in my opinion perfect for bars. The reason I called them breakfast bars is because they aren’t as sweet as I consider a real dessert should be. But perfect for breakfast ^.^
Apricot Bars
Makes one 8×8 pan
- 3/4 lb dried apricots
- 1 cup water
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 cup oats
- 1/2 cup butter, softened
Directions:
Pour apricots, water and granulated sugar into a saucepan and bring to a boil. After it reaches a boil let it simmer for 20-30 minutes until the apricots are softened and the liquid is mostly gone. Pour it into a food processor and process until the mixture is smooth and uniform.
Preheat oven to 350F.
Combine the brown sugar, flour, baking soda, salt and oats in a large bowl. Cut in the softened butter with a pastry blender, two knives, or just use your hands. Grease an 8×8 pan and press two cups of the oat mixture into the bottom firmly. Spread the apricot filling over that, and then sprinkle the remaining oat batter on top, gently pressing it into the apricot layer.
Bake for 35-40 minutes until golden brown. Let cool.
