PB&J Doughnuts

Currently I’m sitting in an airport lounge snacking on hummus and pita bread and waiting for my flight, which of course I was already too early for, and it also ended up getting delayed. Last month I saw insanely cheap tickets on a great airline to Korea, called up my Mom to see if she wanted to go, and here we are. It’s been six years since she’s visited her homeland, so that long since seeing family. So it should be a good time. My momma flew in on Friday afternoon, and then my hubby flew home that very night. So it was a family reunion. And when I think of family reunions I think of game nights! Nothing is better than playing games, laughing and snacking all night. I made a quick Walmart run to stock up for our family reunion and ended up with the Hasbro® Jenga game and a stockpile of M&M’s®. Hubby and I have recently been obsessed with the M&M’s® Peanut Butter and my Mom’s (who’s normally not big on chocolate) one weakness has always been M&M’s® Peanut. So I had a bit of fun with these and put together these PB&J Doughnuts.

The doughnuts are glazed with a peanut butter glaze and filled with raspberry jelly. Then topped with our favorite M&M’s®. I had fun with the M&M’s®, customizing the colors. See, my Mom’s favorite color is red so if we play a game with pieces then she’ll usually choose that. Hubby always chooses yellow, and I tend to choose blue. Obvi I had too much fun with these 🙂 But I love game nights.

Sadly I was late packing amidst other responsibilities so this game night I planned all out didn’t even happen 🙁 But we have tons of family suddenly coming into town the next couple of months so I’m excited to try again soon. I’ll be ready with a Jenga game and doughnuts.

PB&J Doughnuts
Makes about 20

Doughnuts:

  • 1-1/4 cups milk
  • 2-1/4 tsp (1 packet) yeast 
  • 2 eggs
  • 1 stick  (1/2 cup) butter, melted and cooled 
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 4-1/2 cups all-purpose flour
  • 1 quart oil
  • raspberry jelly
Peanut Butter Glaze:
  • 3 cups powdered sugar
  • 1/2 cup peanut butter
  • 1/2 cup milk
  • 1 tsp vanilla extract
  •  M&M’s® Peanut Butter
  • 1/2 cup crushed peanuts
Directions:
Warm the milk to about 90F (basically you want it just warm, not hot). Pour it into a large mixing bowl and sprinkle the yeast on top. Give it a light stir and let it sit for about 5 minutes until foamy.
Add the eggs, butter, sugar and salt, and beat together. Then mix in half the flour. If using a stand mixer, switch to the dough hook and add the rest of the flour until the dough pulls away. Otherwise, once the dough gets too hard to mix transfer it to a clean surface dusted with flour, and gently knead in the remaining flour. If the dough is still too wet to work with, add more flour 2 Tbsp at a time. 
Grease a clean bowl with oil and place the dough inside. Cover and let sit at room temperature for about 1 hour until doubled in size. 
Flour a clean surface well and plop your dough onto it. Roll out to 1/2 inch thick and use a large biscuit cutter or similar round shape to cut out your doughnuts. Place on cookie sheets fitted with parchment paper. Knead together leftover scraps, let rest for a few minutes, then repeat. Cover and let sit at room temperature again until puffed up, about 45 minutes.
Pour your oil into a large pot and place over medium heat. Bring to 375F. Try to keep the oil temperature at 375 during the entire process. 
Prep a cookie sheet with paper towels, then place a cooling rack over the top. This will catch the oil that will drip down from the doughnuts.
Put a few doughnuts at a time into the oil and fry on one side for about 1 minute until a deep golden brown. Use a slotted spoon to flip over and fry for another minute until deep brown. Remove to your cooling rack. Repeat until done. 
Fit a pastry bag with a small round tip. Fill with raspberry jelly. Pierce the side of a doughnut and squeeze jelly into it until it starts pushing back at you. Scrape away the excess and repeat for all doughnuts.
For the glaze:
In a medium bowl, mix together all of the ingredients until smooth. Dip the top of each filled doughnut into the glaze. Sprinkle with M&M’s® Peanut Butter and crushed peanuts. Best eaten within the day.

    Aw my gosh, this is too sweet! Looks so perfect for a chic game night! How lovely. I have a habit of drinking wine and eating chocolates/cheese on rare game nights, because they tend to only fall on special occasions… and the only occasion I get to nerd out with PAYDAY.
