Quick Healthy Meal Solutions

It’s been a crazy couple of months full of traveling for me. Just returned from Korea this week and though I’m excited to finally settle down at home for a bit, I’m also busy trying to catch up on tons of things as well as prep the house for some guests. So these past few days I’ve basically been surviving on these Healthy Choice Cafe Steamers. But more on that in a sec.

Hubby and I have only been able to cross paths once during the past several weeks – we had one precious day together when he returned from a 2-week training, before he dropped me off at the airport again. And he was already on the road again by the time I returned. When he goes on trips, he needs to pack meals to bring with him because they have very long days on the jet, rotating between multiple pilots. It’s hard enough trying to find meals that appeal to him, but making sure it is healthy and gives him proper energy for his long work day, as well as travel-easy, feels impossible sometimes. That’s why I’ve been excited to try out these Healthy Choice Cafe Steamers. I feel like they will be the perfect solution for both hubby and myself: healthy, easy meals for him when he is on the road, and for me when I am either busy or don’t want to cook just for myself.

As much as you know from my blog that I have a huge sweet tooth, I balance it out with healthy well-rounded meals. Did you know that Healthy Choice is the only major brand in the frozen meals section that can call 100% of it’s products “healthy” as approved by the FDA? Yeah, me either, so I thought that was pretty cool. And I love how they separate their sauce from the ingredients, that way everything is way more crisp and fresh-tasting instead of soggy. I’ve been super happy with these frozen meals and can’t wait to send my hubby off with some on his trips. The one below is the chicken marinara. Since my fridge and cupboards were all but bare, all I did was add some grated Parmesan and dried parsley, and it was the perfect quick meal.

    Wow, it sounds like your husband has been wildly busy lately! These meals actually do look really fresh and delicious, which is highly unusually for meals in the frozen food isle!

    You've been SO SO busy! How crazy. We sometimes get Amy's frozen veggie burritos. Especially when there is time to bake them, they feel like a healthier frozen choice. Though we are certainly not immune to frozen pizza… though being home to cook and having groceries has been a bigger priority for us this year so far, and it's going well.
