It was hubby’s birthday last week and this is how things went down: he spent an exorbitant amount of money on gifts for himself, so that left me with very little wiggle room to get him anything. It’s sad for me because I always have grand ideas on what I want to surprise him with, but he likes to pick out his own stuff. But that means I get to be creative, and homemade gifts tend to be more meaningful and memorable, right? Besides his small gifts, I did get to bake him a birthday cake. He requested chocolate, and I had an inkling that despite not being a huge cake-eater he would love this one. Indeed he did. I ate less than one slice and he ate the rest of it haha. And today after an early PT test and brunch, he said that he was craving cake. Success!
There’s no recipe in this post because I used Ina’s exact recipe. The only difference is that I essentially did 3/4 of the cake recipe to make three 6-inch layers and used the entire frosting recipe with hot chocolate instead of coffee. And learn from my mistake: every single cake fell and I believe it’s because I used large eggs instead of the called-for XL. Maybe the structure didn’t hold up because of that? But the flavor wasn’t affected, so I just cut off the fallen tops. Anyways, it’s a recipe I’ve made several times, and it’s perfect. Have you tried it?
