Red & Green Cheese Platter + Savory Holiday Pastries

Today I put up our first holiday “decoration”: a terribly cheesy magnetic grocery list pad with Santa on it. As I did, I warned hubby that by the end of the week all of our real decorations would be up. Even though they haven’t been hung yet, things are already getting festive around here. We stocked up on holiday candles, I made my first pie of the season a few days ago, and today I’m sharing my first holiday recipe. This is a recipe that doesn’t really require a recipe, it’s that simple. But I made one anyways, and it’s perfect for when you need a quick, easy treat. They’re puff pastries cut out into trees and topped with thin slices of red tomatoes and coarse salt. They’re meant to be smeared with a generous serving of cheese spread, and only then are they complete. That’s why they’re perfect as part of this cheese platter, with several other finger foods best eaten with smears of cheese spread.

I have Kaukauna®’s Sharp Cheddar and Port Wine cheese logs as my cheese spreads of choice – they’re smooth, rich and so good. This year they’re celebrating their 100th anniversary, and they have such a cool history. It all started with Eastern European Hubert Fassbender in 1918 while he was in Kaukauna, Wisconsin. He had a goal to create a spreadable, cold-pack cheese that could be distributed to taverns, country clubs, supper clubs, etc. He invented a recipe that made that possible, and Kaukauna® has been popular since. I love the rich history they have, as well as the way they support “supper club culture” – the culture of gathering together over a table and sharing good food and drinks. They’re still in Wisconsin, and still making the same great cheese, although they now have an updated recipe that tastes identical but contains absolutely nothing artificial, even preservatives.

Savory Pastries with Salted Tomato

Ingredients

  • 1 sheet puff pastry thawed according to directions
  • 10-15 red grape tomatoes sliced into thin circles
  • coarse salt
  • 1 pkg Kaukauna® Sharp Cheddar Cheese log

Instructions

  1. Preheat oven to 400F. Prep a large baking sheet with a silicone mat.

  2. On a well-floured surface, roll out your puff pastry until it's about half as thin. Cut into festive holiday shapes and place on your baking sheet. Top with tomato slices, and sprinkle lightly with salt. Bake for about 10 minutes until golden brown around edges. Let cool, and serve with Kaukauna® cheese spread.
