Peanut butter is definitely one of my favorite ingredients, so as I was thinking up all kinds of recipes I could make with SKIPPY® Natural Creamy Peanut Butter Spread, it was very difficult settling on one because there are so many yummy things to do with peanut butter. Eventually, I decided on a peanut butter biscotti because I think it’s perfect for winter – it will add a nice variety to your holiday cookie boxes, and it will taste so delicious dipped into hot chocolate. These days, before I begin my work at 7am, I almost always put together a hot mug of my caffeinated cocoa to sip on, and so the idea of a peanut butter biscotti to dip in it…heaven.
While baking up these peanut-buttery treats, I was thinking about all the people confined to spending the holidays alone in quarantine, as well as their resilience. Before moving to Las Vegas where I’m currently staying with my parents, I, too, was quarantining alone in a small Oklahoma City apartment, where a lot of times the only fresh air I received was when I let my cats explore within a 15-foot radius of our front door. Like so many others’ experiences, it began with optimism, then faint dismality, and then a lot of days were an exerted effort at warding off the gloom. But actually looking back, I also had a lot of fun. I filled my days with work, sitting outside in camp chairs with my cats and waving to the dog-walkers passing by, and even finding time to bake up intricate cakes and post about them on Instagram. I’ve actually ended up with plenty of sweet memories of the creative ways I utilized quarantine.
This past Thanksgiving, my family did not gather as they usually do. Originally, I planned on driving to Utah with my parents and spending time with all of my siblings and their families. One of my brothers was also driving into Utah and had ordered dozens of orange rolls from their favorite bakery to pick up when they arrived. Another sibling had plans to drive to California, stop in Vegas to see us, and enjoy the holiday with other family.
None of those plans happened. Every single one of us stayed home and spent Thanksgiving with our households. But we all made good memories, even so. Since my brother and his family couldn’t get their traditional orange rolls, my mama whipped some up and brought them her homemade ones. My sister was even all alone on the day, but she decided to make herself a full Thanksgiving meal to enjoy. I love seeing how holiday traditions can be creatively maintained even during unique times like this.
There are so many things that help me catch that holiday spirit, and baking is a big one. These peanut butter biscotti are this year’s first! Opening a fresh jar of SKIPPY® Peanut Butter is the best thing ever, it’s like an immediate mood-booster. My bf helped me come up with the idea for this recipe, and it felt perfect. They’re lightly sweet, crunchy biscuits with a good hit of SKIPPY® Peanut Butter, and they taste perfect when paired with chocolate. I even recommend maybe replacing the peanuts in the recipe with minced chocolate pieces, that would be delicious as well. For me, it tastes quite good when dipped in my hot cocoa. Decoration-wise, I came into it with no plan. I was ordering all of my ingredients on Target for pick-up, and browsed their holiday offerings for inspiration. I found peppermint chocolates that were BOGO 25% off, so I grabbed those, and found some meltable vanilla candy coating that had great reviews and decided to use that for drizzling/dipping. I really love how they came out, and I also love how versatile this recipe is. You could really replace the peanuts with anything that tickles your fancy. Give it a go! Peanut Butter Biscotti
Ingredients
- 1/4 cup milk
- 1.5 tsp vanilla extract
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 1 cup SKIPPY® Natural Creamy Peanut Butter Spread
- 1 cup granulated sugar
- 3 large eggs
- 1 cup dry roasted peanuts salted or unsalted
Instructions

Preheat oven to 350F and line two baking sheets with parchment paper.

In a small bowl, combine the milk and vanilla and set aside.

In a medium bowl, sift together the flour and baking powder and set aside.

In a large mixing bowl, beat together the sugar and SKIPPY® Peanut Butter. Beat in the eggs one at a time, waiting until fully incorporated before adding the next.

Alternating between the two, gradually add the milk mixture and flour mixture to the dough, mixing after each addition. If the dough is crumbly, use your hands to knead it until it comes forms a cohesive ball. Fold in the peanuts, again using your hands to push and fold them into the dough.

Divide the dough into 4 equal parts and form each into rectangles about a 1/2 inch thick. Place each piece of dough on the baking sheets and bake for 20 minutes. After 20 minutes, remove to let cool and set the oven temperature to 300F.

Once cooled, use a sharp serrated knife to cut each rectangle into1/2-inch slices at a slight diagonal. If you saw gently with a serrated knife, you can make a clean cut through the peanut chunks with minimal crumbling. Place all cookie pieces back on the pan, sliced side up. Bake an additional 10 minutes, then flip each cookie and bake 10 minutes more. Remove, let cookies cool in the pan for 5-10 minutes, then transfer to cooling racks to cool completely. These taste great dipped or drizzled in chocolate or dipped in hot chocolate.
