Sharing one old favorite and one new favorite today. The old favorite is this muffin recipe: it’s my pops’ recipe that he’s been making for years and tweaked to perfection. He’s really health conscious so I knew this recipe of his would be delish but also hearty and nutritious, and I was right. I made a couple of mistakes when I made it (like forgetting the eggs…who does that?? Haha) but nothing to get in the way of the yummy flavors. This one is a winner, guys. So yummy.
The new favorite is these Quaker® Real Medleys® Yogurt Cups. My hubs is a huuuge yogurt fan. As in eats it every single morning, and I learned long ago not to try waking up early to have eggs and bacon ready because he is happiest with a couple cups of yogurt. But since that is all he eats, he ends up getting hungry for lunch very quickly and I often bring sustenance for his poor starving self because he is too busy to leave work. So I got real excited when Quaker came out with these new yogurt blend cups. I’ve seen nothing like this before-everything is in a shelf-stable cup with my hubby’s beloved yogurt along with granola, fruit and nuts, so it will be able to keep him full and satisfied longer. Plus it’s super easy – just add cold milk and stir.
I put together Real Medley cups and these hearty muffins to form a perfect on-the-go breakfast. Recipe for the muffins below, and you can grab the yogurt blend cups at Walmart in the cold cereal section (as opposed to the hot cereal section, a lesson I learned the hard way…). Three Berry Power Muffins
Makes 24 muffins
- 1-3/4 cups all-purpose flour
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 2 eggs, well beaten
- 1/3 cup oil
- 1/3 cup sugar
- 1 cup mashed bananas (3-4 bananas)
- 1 cup dates
- 1 cup raisins
- 1 cup strawberries, small slices
- 1 cup blueberries
- 1 cup raspberries
- 1 cup chopped walnuts
Directions:
Preheat oven to 350F and line two muffin pans with cupcake liners.
Sift together the flour, baking soda, baking powder and salt. Mix in walnuts. Add the eggs, oil, sugar and mashed bananas and mix well. If the batter seems dry add a bit of milk. Fold in the dates, raisins, blueberries, strawberries and raspberries last.
Pour batter into muffin wells until 2/3 full and bake for 25-30 minutes. Let cool slightly and enjoy.
