Southwest Shrimp and Sausage Bowls

This recipe is so easy I’m not even sure it counts as one. But it was really yummy and simple, and I feel like you guys need to know about it 🙂

Introducing: Suddenly Grains Salads. They are prepped mixes of rice, quinoa, dried veggies, beans, and all sorts of healthy goodness. I knew I would love them because I am a carb-ivore and these seemed like a healthy answer to my addiction. You essentially just boil the whole mix packet, combine it with the given dressing and voila! A delish rice salad that just needs to be topped with some protein. I took the Southwest flavor salad and topped it with Andouille sausage and Cajun shrimp, and they paired deliciously.

The thing about my hubby’s job is that it has an extremely erratic schedule. Even when he’s not flying, I never know if he will be home for lunch or not, so it’s hard to plan on whether I need to cook or not. The day that I made this dish was one of those days he did come home, but I was able to whip this up in like 15 minutes. And he loved it, so that’s why it’s being added to our monthly meal rotation. Southwest Shrimp and Sausage Bowls
Serves 2-3 

  • 1 pkg. Suddenly Grains Salad Southwest
  • 7 oz. Andouille sausage, sliced
  • 7 oz. cooked shrimp, tail-on
  • 1/2 Tbsp. Creole seasoning (or Cajun)

Directions:

Prep the Southwest salad according to directions.

In a skillet over medium heat, fry your sliced sausages until browned on each side and warmed through. Set aside.

Place your shrimp in the same skillet and sprinkle with the Creole seasoning. Cook just until shrimp is warm, 1-2 minutes. Set aside with sausage.

Serve rice in bowls and top with shrimp and sausage.

    I'm not a big sausage person, but this looks good! I like the idea of getting the salad all prepared. We often make burrito bowls like this, but I've never made it with shrimp. Great idea!
