One Pot Chicken Riggies

Today I’m sharing another weekday meal favorite of mine. I always miss my hometown during the Fall when the leaves change, so it made me think of this hometown recipe. I hadn’t made in a while, so I immediately stopped by Walmart to grab all the ingredients. Where I grew up in Upstate NY there is a huge Italian-American population, so I was surrounded by lots of delicious pizzas, pastas, and cannolis. There is a dish famous to the area there called chicken riggies (short for rigatoni pasta), and they even have a festival/competition every year to see which restaurant makes the best version. So there are many variations on the dish, but here is mine.

My brother used to make the whole family chicken riggies back when we weren’t all spread out, and his is my favorite. Mine is a tweak of his recipe, with some healthier changes, and this time I even converted it into a one pot recipe. Check it out:

The sauce is a creamy tomato sauce and I use Hunt’s diced tomatoes and spaghetti sauce, which speeds up the process and makes for an extra quick and easy meal. Check out more easy recipes and find a coupon for Hunt’s HERE.

One Pot Chicken Riggies
Serves about 6

  • 8 oz. rigatoni pasta
  • 1 lb. boneless skinless chicken breast, cut into bite-size pieces
  • 1 Tbsp butter
  • 2 cloves garlic, minced
  • 1/2 large onion, diced
  • 1 can black olives, drained
  • 2 medium jalapenos, scraped of half the seeds and diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (14.5 oz) can Hunt’s diced tomatoes, undrained
  • 16 oz. spaghetti sauce
  • 1/2 cup half and half
Directions:
Melt your butter in a large skillet over medium heat. Once melted, add the garlic, onions and jalapenos and saute until tender, 3-4 minutes. Add the chicken and sprinkle with the oregano, basil, salt and pepper. Stir to coat and cook until chicken is just done, about 5 minutes. 
Pour in the diced tomatoes, spaghetti sauce, and olives. Stir to combine and bring to a simmer. Taste and add more spices as desired. Add the rigatoni pasta and let simmer about 5 minutes. Add the half and half and simmer for another 15 minutes or until the pasta is cooked al dente. Serve right away.

    This has all my favorite ingredients in it, especially olives. I am definitely trying it out since I'm a huge fan of pasta and am always looking for new ways to cook it and this looks like perfect comfort food. <3
