Strawberry Crunch Mousse Cups

Here is a fun treat that dresses up nicely but is beyond easy. 
I did a fresh strawberry-marshmallow mousse with the easiest crunch filling ever. I have a weak spot for Rice Krispies Treats, so while at Walmart I grabbed a box of them thinking they would add the perfect texture to this dessert. I would actually recommend putting in double (even triple!) the Rice Krispies Treats that you see in my photos, I found myself wanting more! Nom.

Strawberry Crunch Mousse Cups
Fills about ten 2-oz cups

  •  3-4 Rice Krispies Treat bars, cut into small squares
  • ½ lb. fresh strawberries, hulled + extra for garnish
  • 2 Tbsp. granulated sugar
  • 2 cups Jet-Puffed miniature marshmallows
  • 1-1/2 cups heavy cream
  • White chocolate chips

Directions:

Place your strawberries and sugar in a small saucepan over medium heat. Cook for about 3 minutes until soft enough to smash. Mash until there are no large chunks left. Place back over low heat and add marshmallows, stirring until they dissolve. Remove from heat and let cool.

In a clean bowl, whip your heavy cream until it reaches stiff peaks. Take out one third of it and set it aside in the fridge to use later for garnishing. Fold the remaining cream into the cooled strawberry mixture. 

To assemble:
Pipe or spoon the strawberry-marshmallow mousse into your cups, filling 1/3 of the way up. Then sprinkle a generous amount of Rice Krispy Treat bits and white chocolate chips over top. Fill the rest of the way with more mousse. Take the whipped cream you set aside and pipe a dollop on each cup, then garnish each with a strawberry half or chocolate chips.
