Snickers Power Granola Bars

My mother-in-law sent me some delish power balls the other day while my hubs was gone on a mission. I accidentally ate them all before he came home so he didn’t get to try any, whoops! They were just such a perfect on-the-go treat that I could grab whenever I knew I’d be hungry but didn’t have time to sit down to a meal. So I grabbed the recipe for those power balls and adapted them into a granola bar that I made with SNICKERS®. Since we’ve been traveling a ton lately, I made a bunch of these to keep in my freezer and grab whenever I know I’ll need an energy pick-me-up.

The SNICKERS® Almond and Peanut Butter variations are really yummy and I used both in this recipe. I grabbed the individual bars at Walgreens but I also saw fun-size bags with all the variations at my local store FYI. And another note: I tried making these with peanut butter instead of honey but unfortunately they came out too crumbly; I think the honey just sticks better.

Snickers Power Granola Bars
Makes about 12 bars

  • 2 cups oats
  • 1/4 cup chia seeds
  • 1/4 cup flax seeds
  • 1/2 cup shredded coconut
  • 3/4 cup honey
  • 1/4 cup + 2 Tbsp packed brown sugar
  • 3 Tbsp unsalted butter
  • 3 tsp vanilla extract
  • 3/4 tsp kosher salt
  • 3/4 cup Snickers Almond or Peanut Butter, chopped
Directions:
Line a quarter jelly roll pan or 8×8 in. square pan with aluminum foil.
Combine the brown sugar, butter, vanilla, salt and honey in a small saucepan and place over medium heat. Stir until the sugar is dissolved. Remove from heat. 
In a large mixing bowl, combine the oats, chia seeds, flax seeds, coconut, and chopped Snickers. Add the liquid mixture and stir well. Pour into your pan evenly and press down firmly. I used the bottom of a mini loaf pan and took a good 5 minutes to press this down, you want it to be as tight as possible. Refrigerate for at least 2 hours. 
Gently use the aluminum foil to pull the bars out of the pan and place onto a cutting board. Cut into rectangles and enjoy.
