Grilled Shrimp Scampi over Whole Wheat Spaghetti

In an effort to work more lean protein into my diet I grabbed some shrimp at the store and this is the dish I came up with. Turned out so yummy and I wish I’d made two servings instead of one so that I could have leftovers. Oh well 😉

Grilled Shrimp Scampi over Whole Wheat Spaghetti
Serves 1

  • 2 oz. whole wheat spaghetti
  • 8 medium shrimp, peeled and deveined
  • 1 Tbsp olive oil
  • 1 Tbsp butter, melted
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp chopped fresh parsley + extra for garnish (opt.)
  • 1/2 Tbsp garlic, minced
  • pinch pepper
  • generous pinch crushed red pepper
  • 2 skewers
Directions:
Soak skewers in water until ready to use.
Mix together the olive oil, butter, Parmesan, lemon juice, parsley, garlic, pepper and crushed red pepper. Place half the marinade in a small bowl and set aside. Put the shrimp in a plastic seal-able bag and pour the remaining marinade over them. Let marinate in the fridge for 30 minutes.
Boil your spaghetti al dente. While that is cooking, prep the shrimp:
Turn grill to med-high heat. Place the shrimp on the skewers, poking through both the head and tail of each. Grill for 2-3 minutes each side until opaque. Remove from heat.
To assemble: 
Toss the cooked spaghetti in your reserved marinade sauce and place in a shallow bowl. Top with grilled shrimp, sprinkle with fresh parsley and Parmesan cheese (opt.), and enjoy!

    Okay, so I am such a cooking novice…I tried cooking shrimp a few months ago, and ended up leaving the grocery store with a pound of $18 shrimp! I felt like I paid a little too much but I did not realize that the shrimp I bought was not de veined…so yeah, cooking novice here! I will need your help when I get back with a few of these dishes because they look too delicious not to try 🙂

    This looks absolutely amazing. I've always loved shrimp (when I was younger, I use to eat entire cocktail rings around the holiday season–my uncle always joked that I would grow up to have very high cholesterol). I still love shrimp, but rarely think to cook with this. Can't wait to try this recipe out!
