Last week hubby had his annual colonoscopy, which meant that he couldn’t eat anything but clear liquids for at least 24 hours prior. It was a Sunday when he had to fast, which makes it a little harder since you’re not busy at work and such. Basically he spent the day eating gelatin, and I spent the day hiding in the corner of my kitchen trying to eat a bag of chips as quietly as humanly possible. We were both glad when it was over, and as a reward for his suffering, I planned a big, beautiful date night meal for afterwards. My hubs really likes popchips – not only are they lower cal, but he loves the flavor and texture. They’re never fried, contain only real ingredients, and they’re super crunchy, so they’re a muncher’s dream. We tried a few new flavors – zesty jalapeno cheddar, buffalo ranch ridges, and barbecue. My favorite flavor was the jalapeno, it’s got cheddar and spice, and y’all I love spice so much. One week after having this little date night party we both hit the road to go in opposite directions – hubby to Alabama, and me to Vegas. Fresh Fruit:
Fresh fruit is a necessity for summer get-togethers. It spices up drinks, adds color to the table, and is so refreshing for hot weather. We went a little crazy and bought a whole case of nectarines for the two of us as well as these cherries, but we regret nothing.
Pimento Cheese:
Here’s another southern treat we’ve readily embraced. We’ve been loving pimento cheese this summer, so I whipped up a batch and served it along with our popchips. We ended up spreading it on our burgers as well, it makes a perfect condiment.
