If you’re like me, you’ve never heard of cranberry seeds before this moment, haha. I’ve been really excited to discover and use them because 1) they’re so versatile I had a blast just dreaming up all kinds of recipes I can use them in, and 2) the color is so pretty (!!) that I’m like, why use poppy seeds or chia seeds when I can use these pretty red seeds?? That’s the food blogger in me, maybe? They’re also nutritious fyi, but more on that below. I still have all kinds of recipe ideas in my head, but I settled on these pancakes because I was randomly craving them so badly! Turns out it was recently World Pancake Day/Shrove Tuesday so maybe that’s why lol, I probably scrolled through tons of Instagram pancake photos without even noticing. Add this pancake recipe to your list, though, especially if you love lemon desserts like I do. These have a good punch of lemon flavor and are taken over the top with the Ocean Spray Cranberry Seeds.
So here’s the deal with cranberry seeds: they are not just pretty, they add a nutritional boost to your recipes too! They are excellent for fiber (1.6x the fiber of chia and flax seeds), and have zinc, magnesium, and Omega 3 fatty acids. Plus the pretty color is all-natural, and they’re GMO free, allergen free, and have no additives or preservatives. Essentailly, they are a great supporter for digestive health and immunity. Just sprinkle them into a recipe or on top of your breakfast and you get all of those benefits! That’s pretty cool. My mom has been sprinkling them on top of our oatmeal bowls in the morning. They are neutral in flavor so it just adds color and nutrition.

There are so many lemon pancake recipes out there, right?? But there are two things that set mine apart. First, mine have a BIG lemon kick! If I’m eating a lemon dessert, I NEED to really taste that lemon or else I get disappointed. These really taste like lemon and they were perfect with just some strawberries and maple syrup. Second, the cranberry seeds, of course. It’s a welcome boost of nutrition as well as an easy way to make your pancakes extra pretty.
I mention this all the time on my Instagram, but I’ve been living with my parents for the past 6 months here in Vegas and it’s been the best. Every morning my mama brings me a smoothie, or a yogurt bowl, or an oatmeal bowl while I’m working, and it’s the best!! I am so spoiled here. Now that we have these cranberry seeds, she just sprinkles them into/onto all of those. It’s so easy.

Lemon Cranberry Seed Pancakes
Ingredients
- 1 Tbsp Ocean Spray Cranberry Seeds
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1.5 Tbsp lemon zest (about 2 lemons)
- 3 Tbsp fresh lemon juice (about 2 lemons)
- 1/2 cup vanilla yogurt
- 1/2 cup almond milk plain unsweetened
- 2 Tbsp unsalted butter melted
- 1 large egg
- cooking spray
Instructions

Sift together the Ocean Spray Cranberry Seeds, flour, sugar, baking powder, baking soda, and salt.

Add the zest, juice, yogurt, almond milk, and egg and begin to whisk. While whisking, pour in the melted butter, whisking continually so that it doesn't curdle the mixture if still warm.

Place a large skillet over medium heat. Once warm, spray liberally with cooking spray and use a 1/4 measuring cup to pour as many pancakes as you can fit into your pan. Once edges are bubbly/baked (about 3 minutes), flip pancakes and cook until done, about 3 minutes more. Repeat until batter is gone.

I recommend eating with fresh fruit and maple syrup. Enjoy!
