Lemon Cranberry Seed Pancakes

Servings 9 pancakes

Ingredients

  • 1 Tbsp Ocean Spray Cranberry Seeds
  • 1 cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1.5 Tbsp lemon zest (about 2 lemons)
  • 3 Tbsp fresh lemon juice (about 2 lemons)
  • 1/2 cup vanilla yogurt
  • 1/2 cup almond milk plain unsweetened
  • 2 Tbsp unsalted butter melted
  • 1 large egg
  • cooking spray

Instructions

  1. Sift together the Ocean Spray Cranberry Seeds, flour, sugar, baking powder, baking soda, and salt.

  2. Add the zest, juice, yogurt, almond milk, and egg and begin to whisk. While whisking, pour in the melted butter, whisking continually so that it doesn't curdle the mixture if still warm.

  3. Place a large skillet over medium heat. Once warm, spray liberally with cooking spray and use a 1/4 measuring cup to pour as many pancakes as you can fit into your pan. Once edges are bubbly/baked (about 3 minutes), flip pancakes and cook until done, about 3 minutes more. Repeat until batter is gone.

  4. I recommend eating with fresh fruit and maple syrup. Enjoy!
