In a large pan over med-high heat, cook the ground beef with the Creole seasoning, cumin, chili powder, and salt and pepper, breaking the beef into small crumbles with the spatula. When cooked through, remove to a clean plate and drain excess fat from the pan. Over medium heat, melt the cheddar cheese. Once it's melted, stir in the tomatoes and green chilies, then the cheddar jack cheese. Stir until the cheese is melted, then gradually stir in the milk. Lastly add the ground beef. Enjoy immediately.
