Seafood Salsa

I saw an article the other day that said people who put up their holiday decorations early are happier people. Haha, I believe it, and I convinced my hubby to let me put up the Christmas stuff this week. Holidays are the best, and they fly by WAY too quick, so getting the decorations up earlier is a good way to make them last longer! That being said, I am also beginning my holiday recipes early! This is not a holiday-only recipe, but it’s great for holiday entertaining because it’s super fast and easy, and just fancy enough to impress guests. Behold: Seafood Salsa.

I combined Louis Kemp Crab Delights® with chopped shrimp and colorful veggies, and it made a perfect blend of texture and flavor. Honestly, the original recipe I came up with was a half portion of what I have posted here, but I ended up making the whole thing again the next day (since we gobbled it all up…), so I decided to post a larger recipe, and trust me on it – you’ll want the whole thing. But the second day, I did add a bit more of the crab and shrimp because hubby requested it. He’s a total gym rat, and Louis Kemp Crab Delights® is really good lean protein, so you can see why he wanted me to add as much as possible. If you’re like hubby, add more crab and shrimp! Why not?

This is my second recipe with Louis Kemp Crab Delights®. They have great flavor and are really convenient, so it’s been fun thinking up recipes to use them in. Check out my crab deviled egg recipe a couple posts back if you haven’t. I was so proud that they got a nice amount of attention on Instagram! One reader recreated the recipe the very next day and posted it on her stories (thanks @jenerousplates!), and another follower asked me on three different communication channels where he could find the recipe (just follow the blog link in my profile!). So that one got good reviews, and this one has a good review from me and hubby. Hope you’ll give it a try! Seafood Salsa

Ingredients

  • 1 red bell pepper finely chopped
  • 1/4 red onion finely chopped
  • 2 jalapenos finely chopped
  • 1 cup frozen salad shrimp thawed and chopped
  • 1 cup Louis Kemp Crab Delights® chopped
  • 1/2 cup corn kernels
  • 2 tsp lime juice
  • 1/2 tsp salt
  • pepper to taste

Instructions

  1. Combine all of the ingredients, and mix well. Taste, and add more salt or pepper as desired. Enjoy right away, or keep refrigerated.
